Toasted crumbs of Dökkt Rúgbrauð { Icelandic Rye Bread }, folded into a batch of 68% Lahuá Dark. Topped with more crumble + sea salt.

Dökkt Rúgbrauð is an Icelandic rye bread, traditionally baked in a pot, burried in a geothermally heated earthen pit.

Bean origin: Lachuá, Guatemala

Butter origin: Dominican Republic

Cacao: 70%

Laguna Lachuá is a large pristine cenote lake deemed a national park in 1976 and a Ramsar site in 2006. Cacao farmers are organized into three certified organic community associations, ASODIRP, ASOSELNOR, and K’ATB’ALPOM, each with its own fermentation and drying operation.

The cacao used in this bar was ethically sourced from Lahuá communities in Guatemala via Uncommon Cacao. We pay the farmers above fairtrade prices in an effort to adequately compensate farmers’ labour, support local infrastructure, and encourage sustainable growth.
