Ana Sora, a natural processed heirloom coffee varietal from Ethiopia complimented by the cacao from Tabasco, Mexico into a batch of fruity mocha with genlte notes of strawberries.

Ana Sora is a natural processed heirloom varietal from one of the few privately-owned farms in Ethiopia. Owner Esrael Degefa sorts cherries with precision in flotation tanks to separate the underripe cherries. The very high altitude slows maturation to a crawl and imparts incredible vibrance and complexity in the cherries.

The cacao used in this bar was ethically sourced from Hacienda Jesus Maria cacao farm in Tabasco region of Mexico via MABCO. We pay the farmers premium prices in an effort to adequately compensate farmers’ labour, support local infrastructure, and encourage sustainable growth.
